I know what your thinking…Tomatoes?! Well, yes. Tomatoes. All of the 400 tomato plants we planted are dead, except for two. One of these freak plants is the size of a car. It keeps making cherry tomatoes like it is the fourth of July. I did not want to pick tomatoes for the CSA until there was enough for an entire handful for each box. Tomatoes in late January are unheard of. So enjoy. Make it count!

Swiss Chard and Arugula Pesto

1 T plus 1/2 cup good fruity olive oil

3-4 cloves garlic, peeled and crushed
1/2 lb mixture of swiss chard, leaves removed from the stems, and arugula, tough stems removed
1/2 cup parmesan cheese

Toast the nuts until lightly brown.  Remove from pan.  Add 1 T olive oil and garlic.  Toss to coat then add the greens a handful at a time tossing constantly.  Steam lightly then remove to cool.
