Snow in Lakeside
Here is a recipe for beet carrot bread. We made some for the work party tomorrow and it turned out pretty good. I made some modifications to the recipe and the pan size after sampling it though.
  Here is the modified recipe:

    •    Separate 3 eggs, beat yolks
          Add 1 cup butter
          Add 1 1/2 cups brown sugar, beat all together

    Then beat in:
         1 cup shredded beets
         1 cup shredded carrots
         2 tsp baking powder
      1 tsp salt
     1 tsp cinnamon
          1/2 cup chopped nuts (optional) either walnuts or pecans
          2 1/2 cups unsifted flour
          1 tsp grated orange rind (don’t skip the orange rind, it really makes this bread “happen”)
        whip egg whites until fluffy and add last
    •    Put into 2 greased and floured regular size loaf pans.
    Bake at 375 F for 45 mintues.

 These broccoli shoots are out of this world flavorful. They do not need much. They actually turn blue in the pan if you do not cook them too much. Raw in a salad, or just get some oil in a pan hot, toss a handful in and cut the heat and let them warm up.

Maybe substitute kale or broccoli for the spinach?

It has been a busy few weeks here. I would like to sit down soon and give everyone a field report and an overall update about what has been going on. Hopefully next week.

One thing I know for sure is that we are not going to get those shitake mushrooms like we did the last couple years. I know that I said I was about to make the trip to Ramona. But long story short, we are not going to get them. Ha H a Haaa Ho Ho Hoo Oh well.
