Green Beans And Tomatoes With Basil Recipe
3/4 lb french beans
3/4 cup of cut tomato peices
2 cloves garlic
1/4 cup chopped basil
2 tbsp olive oil
1 tbsp vinegar “balsamic if you can”
pinch of sugar
a couple pinches of salt
Blanche the green beans in boiling water until they are just done. Rinse in cold water and then drain.In a small bowl, whisk together the oil, vinegar and sugar. Combine the green beans, tomatoes, garlic and basil in a large mixing bowl. Pour the dressing over the vegetables and mix gently until all of the beans are coated. This salad works well prepared a few hours in advance (2-4). When you are ready to serve the salad, toss it again with 1 ½ teaspoons of coarse salt. Serve the beans at room temperature. this dish is especially colorful in summer when we have so many different colors of tomato to work with.
Cut two slices of country bread. Drizzle one side with olive oil, place two slices of tomatoes on top, followed by two slice of mozzarella and a few leaves of fresh basil. Serve.
