This Weeks Box 8/3/2012

Here is what is in the box this week
chard
tomato “just a taste”
corn
summer squash
eggplant
bell pepper
carrots
lettuce
mullberries
pink lemons
oranges
cucumbers
a few sprigs of basil
Ok. Last week I announced that we would have strawberries in this weeks box. Well, to my surprise, the mulberry tree is still producing. So it is mulberries again! 
Dad's Ratatouille 
Summer Ratatouille

Ratatouille is a well-known vegetable stew hailing from Provence, a region in France famous for the bounty of its produce. It’s no surprise then that this stew is a celebration of hard-working farmers and the fruits of their labor. It’s common to find eggplant, tomatoes, onions, bell peppers, zucchini, garlic, and herbs all cooked slowly in olive oil in this hearty and comforting staple. It is considered a healthy and very filling dish. It’s a favorite among dieters because it is high in nutrients and low in calories. Ratatouille is a balanced meal suitable for vegetarians and vegans. For those of you concerned with the lack of protein in this dish, you can always add chicken or fish.

There are hundreds of recipes for this dish online. Here is a recipe that is pretty basic and can be modified to fit almost everything in the box this week. Including the corn and basil. Mnnn!

We only put ripe tomatoes in the boxes. If it is green like this green zebra, you should expect it to be ripe and ready.
